COST for Beef and Lamb is based on gross Hanging Weight (the weight of the carcass before trimming and being butchered into cuts). Harvester Fee is an additional $75 ($37.50 for Half Orders). Butcher Base Fee is $.75 P/LB, payable to Butcher upon pick-up.
HOW TO CALCULATE LIVE WEIGHT TO PACKAGED MEAT & YOUR TOTAL COST? Half Beef weighs approx. 300 lbs gross hanging weight. After trimming, cut & wrap, your total meat comes to about 250 lbs.
