COST is based on gross Hanging Weight (the weight of the carcass before trimming and being butchered into cuts). Harvester Fee is an additional $75 for Beef, $60 for Lamb and Pork. Butcher Base Fee is $.75  P/LB, payable to Butcher upon pick-up.
